主要承担本科生《食品安全风险评估》、《食源性流行病学》、《食品毒理学》等课程的教学工作。

聂少平博士主要从事食品化学与分析,食品营养与安全,食品复杂碳水化合物等领域的研究工作,截止2014年底,主持国家自然科学基金、科技支撑计划研究任务等国家级课题7项,参与863、973等8项国家级课题,发表论文170多篇,其中SCI论文90多篇;合著或参编著作6部,获授权发明专利10项。2014年获国家自然科学基金优秀青年基金资助,2014年起受聘为江西省高等学校“井冈学者”特聘教授。获国家级教学成果奖二等奖等各类奖项10余项。入选教育部“新世纪优秀人才支持计划”,任国际杂志Bioactive Carbohydrates and Dietary Fibre的Assistant Editor。主持的部分在研项目列表如下:
